Fermeat

Okara, a "waste product" from tofu production, is intergrown with a mycelium (fungal material) and thus results in a new kind of vegan food. In this collaboration with the School of Agricultural, Forest and Food Sciences HAFL of the Bern University of Applied Sciences BFH, it was my task to find a suitable shape for the novel product. The final name of my design or product was "Fatar" (Arabic for "mushroom").

My design aims at sharing the product and that the okara can be prepared in as many ways as possible (frying, grilling, gratinating, boiling). The surface structure allows other ingredients to adhere well during gratinating and provides cutting lines for accurate quartering of the block. The flat underside, in turn, provides a good surface for frying.

Year 2021
Size 110 x 180 x 18 mm
Material Okara, Mycelium
